Today, I am very much in a holiday mood. The morning started out brisk and cold, covered in fog and crunchy orange leaves. I bundled up in a scarf and knit hat and headed to the mall to do some Christmas shopping. Unfortunately, I have been having a really hard time finding gifts for my loved ones this year, and I left the mall empty-handed. Since the Christmas shopping failed, I decided to do some Christmas baking to satisfy my holiday cravings. When I got home from the mall, I poured over my holiday baking recipes trying to decide what to bake. I finally decided on Gingerbread Biscotti. I chose this recipe for a few reasons: my dad, who lives out of town, loves biscotti and he’s coming home for the weekend and I am a big fan of anything that pairs well with coffee, so biscotti fit the bill. I have never made biscotti before and it was a little more difficult than I thought it would be. After a few revisions and improvisations (they took longer in the oven that the recipe called for and some only faintly resemble the traditional biscotti shape), they were finally done. Mmm! They were sooooo good! The whole process took quite awhile and made a giant mess, so I don’t know that I’ll be baking biscotti regularly, but they were well worth the effort for an afternoon holiday treat!
